Winemaking notes:

The grapes are all harvested by hand using small crates and then immediately pressed, avoiding all kinds of skin maceration and thus an excessive passage of coloring agents into the wine, which thus assumes a delicate cherry shade. Only the very first must bloom is used to produce this wine. Having been cleaned through a natural cold-sedimentation, the must starts its fermentation at a low temperature with a direct foaming process; a direct foaming produces very fine and delicate bubbles.

Soil type: Deep silty and clay-like soil, with iron and manganese nodules and an ancient gravelly basis. Organic matter and fossils are very common.
