Description
Winemaking: The grapes are all harvested by hand using small crates. Right after the soft pressing, the must begins a first fermentation thanks to a pied de cuve of selected yeast. The base wine is then bottled after the addition of the so-called “liqueur de tirage”: a mixture of sugar, yeast and mineral substances, the purpose of which is to activate a second fermentation that will happen directly inside the bottle. The wine then rests on its lees for more than 50 months before the dégorgement, the dosage and the final corking with the traditional corks.
