Description
Winemaking notes: The grapes are all harvested by hand using small crates. They are then immediately pressed and transferred into a vinificator, for a maceration lasting approximately 15 days. The 30% of the must is then drained and stored at a controlled temperature, while the rest ferments for 6 days in contact with the skins. The addition of the non-fermented must to the fermented wine causes a further fermentation that takes place at a controlled temperature of 15°C. The process of secondary fermentation has a total duration of at least 90 days.
