Winemaking notes
The grapes are all harvested by hand using small crates; once destemmed and pressed, they are transferred in tanks, where through the process of fermentation all the polyphenolic substances contained in the skins are extracted. After the alcoholic fermentation, a malolactic fermentation lowers the acidity of the wine making it smoother. For 12 months the wine is left to rest in in slightly toasted aged French oak barriques, and it then continues a long ageing directly in the bottle.
