Winemaking notes:

All the grapes are selected and harvested by hand in small crates; always kept at a controlled temperature, the grapes are destemmed and pressed before a brief criomaceration. The cold maceration is used in order to enrich the organoleptic properties of the wine, preserving all the varietal aromas that are particularly rich in this kind of grape. The must then ferments at controlled temperature, while a small part is kept sweet at a cold temperature, in order to be used in a second step for the second fermentation and the final foaming.

Soil type: Very deep, calcareous and akaline soil, with clay and silt deposits. Rich substrate of alluvial gravel.

Plant density: 3700 plants/Ha

Age of the vineyard: 14 years

Time of harvest: First decade of September

Average yield per hectare: 100 Q./ha
