Description
Winemaking notes:
The grapes are all harvested by hand using small crates; once the destemming and pressing are completed, they are collected into tanks where they will ferment in contact with the skins for approximately thirty days. Next comes the alcoholic fermentation and lastly the malolactic fermentation that makes the wine smoother and softer. At the end of the fermentation process, the wine rests for twelve months in a big oak vat and then concludes its ageing process in the bottle for six months.
Soil type: Very deep and clayey soil, rich in limestone with a substrate of fossil marls.
