Description
Winemaking:
Our Passisia, the Passito made from Malvasia grapes, is the fruit of our latest experiment. To produce it, we begin by harvesting carefully selected bunches of grapes by hand. The drying process occurs naturally in crates with controlled temperatures and continuous artificial ventilation. Over the course of weeks of drying, the grapes dehydrate, decreasing their water content and increasing the concentration of sugars and aromatic compounds. After about two months in the crates, the grapes are transferred to the manual press for final pressing. Soil type: Deep, red, mineral-rich soil and sand with a gravelly texture.
Substrate: of dark gray clayey and fossiliferous marl.
