Winemaking:
All the grapes are collected in small crates and kept at a controlled temperature in order to preserve their quality and integrity. Once at the winery, every single grape is destemmed by hand, selecting each berry. The hand destemming process keeps the berries intact, preventing the must from high temperatures and oxidation. The must ferments in contact with the skins inside the anforas, where it macerates and ages for 5 months before the final racking and bottling.
Soil type: Very deep, calcareous and akaline soil, with clay and silt deposits. Rich substrate of alluvial gravel.
