The Traditional Method “Cerioli X Brut” is the very best expression of an entire vintage; it comes from a long aging that enhances its balance and complexity. This wine is our whole production’s premium product, fruit of a personal challenge undertaken by Alex Cerioli back in 2013; Oinoe’s founder wanted to attest the great potential of our terroir on the hills of Parma, proving that it is also perfect for the production of excellent traditional method wines.

Since 2013 “Cerioli X Brut” has come a long way; mentioned in 2020 among the very best traditional method wines in Italy according the official Vinitaly International Guide, it has also obtained many National and International awards and recognitions.

Only this special selection has though shot right through our hearts for its quality and uniqueness, fruit of a perfect harvest and vintage both for weather conditions and aging. This is the special vintage that we strongly wanted to dedicate to Teatro Regio di Parma, as a tribute to this Sacred Opera Temple that has always filled with pride both the citizens of Parma and the whole Territory.

Only this special selection has though shot right through our hearts for its quality and uniqueness, fruit of a perfect harvest and vintage both for weather conditions and aging. This is the special vintage that we strongly wanted to dedicate to Teatro Regio di Parma, as a tribute to this Sacred Opera Temple that has always filled with pride both the citizens of Parma and the whole Territory.

It is a great honor for Oinoe to be able to establish such a precious collaboration with a great institution of our territory; it is also a huge satisfaction to raise a glass of DOC Spumante from Colli di Parma surrounded by the foyer’s columns.

“Cerioli X Brut Teatro Regio” is produced with the best Pinot Blanc and Chardonnay grapes from a unique vineyard called “I Boschi” (“The Woods”) because of its particular position, immersed in the middle of a dense wood just below Mt. Moro, in Traversetolo.

It is here that a perfect balance between soil and climate creates the ideal terroir for a Traditional Method Spumante. The ancient and calcareous clay marls, combined with a strong day-night temperature range and a cool climate bring substance, minerality and integrity to the wine, which stands out for its great persistence and for its citrusy and saline finish.

“Cerioli X Brut Teatro Regio” is an elegant and delicate Spumante in which the traditional notes of pastry and yeast, due to a long aging on the lees lasting more than 50 months, are combined with great freshness and acidity. Its color is a brilliant and golden yellow, and the bubbles are very numerous and fine, collecting in a perfect and persistent perlage.

After the hand harvesting all the grapes are brought together at the winery, where they undergo a further hand selection. They are then very gently pressed without being destemmed, in order to avoid an early breaking of the skins and to prevent any kind of oxidation or exposure to heat. Only the free-run must, fruit of the first and most precious pressing, is then directly sent inside the tanks for a first fermentation, always maintaining a controlled and stable temperature inside the stainless steel tanks.

After a first fermentation, the wine is added with the so-called ”liqueur de tirage”, made of a mixture of selected yeast and grape sugar. Still turbid, it is then bottled for the second fermentation that takes place directly inside the bottle. After more than 50 months of aging and once the long and accurate operation of manual remuage is terminated, the time comes for the disgorgement operations that are meant to eliminate all the remaining residues of the fermentation. The last step before the final corking is then the addition of a dosage in order to reach the perfect amount of softness for the wine.
