Winemaking notes:

Hand harvested and selected in small crates, the grapes are immediately destemmed and pressed. They are then transferred in stainless steel tanks for a cold and static maceration that enriches the wine’s body and preserves all the primary aromas of the varietal. While the largest part of the must starts a first fermentation in contact with the skins, a small 20% is drained and kept sweet at a low temperature. This must will then be used in order to start a second fermentation and the foaming of the wine, in pressurized tanks at a controlled temperature.

Soil type: Deep and calcareous soil with a clayey silty mixed texture, a gravel skeleton and pebbly surface.

Plant density: 3000 plants

Age of the vineyard: 12 years

Time of harvest: Second-third decade of September

Average yield per hectare: 110 Q.
