Oinoe also offers a number of organic products grown on a 14-hectare estate located on the south side of the hills of Traversetolo with a natural spring and a perennial pond. These fields have been producing certified organic products for over 20 years. Through crop rotation the soil is planted with hay, two types of chickpeas (smooth white and ancient rough black), durum wheat and two varieties of soft wheat.
These primary products are used for the production of wholemeal and type 1 stone-ground flours, and a type 0 traditionally milled flour.
These flours are particularly suitable for products needing a medium and long leavening such as pizza and bread.
